Buffalo Chicken Sloppy Joes/Nachos, fix approved!
Football season is in full swing and that means fun, family, and food all weekend at my house! Tailgating can be a real tough spot when you’re trying to maintain your healthy lifestyle. I’m from Rochester, NY, about a little over an hour from Buffalo-home of the Buffalo style chicken wings, and my BIGGEST craving during football season. I needed something that was both 21-day fix and chicken wing craving approved; and so the Buffalo Chicken Sloppy Joe was created.
But wait… this awesome recipe is actually dual purposed; as it serves for an amazing topping for Buffalo Chicken Nachos too! Both with the same fix swap- Happy Tailgating!
21 Day Fix Guide:
Per serving (makes 4-5) 1 Red, 1- blue, 1-green,1-yellow
Options: 1-red (Greek yogurt) 1-green for nacho veggies
Prep Time: 5 min Cook Time: 10-15 min
Recipe:
1-lb ground chicken or turkey
1-medium onion, diced
1- pepper, diced
1/2 package broccoli carrot slaw, chopped
2-3 cloves garlic, minced
8 oz tomato sauce
Franks red hot
Blue cheese crumbles
Salt and pepper to taste
In large skillet add onion, garlic, peppers until soft, about 3-5 min on med/high heat. Add chicken. When almost completely browned add slaw and salt and pepper to taste. When chicken is fully cooked, add 1/2 can tomato sauce and red hot and reduce to simmer. *important* add more tomato sauce for mild, more franks for spicy. I put so much Franks I had to dip mine in a side of greek yogurt.
and do this if you like a "creamy blue cheese").
Simmer for 5 min, or until preferred constancy.
Serve with bread for sloppy joe topped with blue cheese crumbles or on top of tortilla chips for nachos.
