Stop... it's pizza time!
Happy National Pizza Day!!!
Pizza!!!!!! It is my Achilles heal, my kryptonite, my favorite thing of life to eat... and one of the WORST foods to love when you are trying to stay the course with clean, healthy eating... that is until today! The Cauliflower pizza will satisfy all your pizza cravings and the three cheese blend will feel like a decadent cheat, but it’s totally fix approved and full of protein! Here are some of my favorite, easy, healthy, and even fix approved pizza recipes!
Cauliflower Pizza Crust: Time to Table: 20-25 min Ingredients
1/2 head of cauliflower 2 large eggs 1/2 tsp oregano 1/2 tsp basil 1/4 tsp paprika 1/2 tsp garlic powder salt/pepper to taste Directions
Pre-heat oven to 400° F. Line a baking sheet with parchmont paper and spray with Pam. Chop the cauliflower florets into chunks. Add to a food processor and pulse until the texture is similar to rice. Place cauliflower “rice” in a microwave-safe bowl and cook for about 5 minutes. Squeeze out all water and use paper towels to make sure cauliflower is very dry. In a bowl combine the cooked cauliflower with all remaining ingredients. Spread and press dough out evenly over baking sheet to make 2 personal pizzas about ¼ to ⅓ of an inch thick. Bake for about 10 minutes or until the crust is golden, crispy on the edges and cooked through the middle. Then flip the pizzas over onto another piece of parchmont paper on baking sheet and bake for an additional 5-10 min. Top with pizza sauce and toppings. Bake the pizza for about 5 minutes, or until the toppings are hot and the cheese is melted. Serve immediately. ***21 DAY FIX Containers: (for both pizzas) 2 green, 1 red, and 1 blue *****
Flat out Roasted Sweet Potato and Caramelized Onion Pizza Time to Table: 15-20min
Ingredients:
1 Flatout Wrap or Pizza Crust 1/3 cup of part skim ricotta 1/3 cup of shredded mozzarella ,or Fontina, and parmesan cheese, combined 1 medium to small sweet potato, diced
1 small sweet onion, caramelized (see earlier blog post here)
1/2 cup of arugula
1/2 Tablespoon fresh or dried italian herbs (parsely and basil)
Sprinkle of garlic powder and crushed red pepper Olive oil cooking spray 1/2 teaspoon of olive oil 1/2 teaspoon fresh lemon juice 1. Preheat oven to 375. Drizzle sweet potatoes with EVOO and Roast for 10-15 min or until soft.
2. Spray Flatout with olive oil spray and precook crust for 2 minutes.
3. Mix herbs into ricotta 4. Spread ricotta cheese on Flatout crust. 5. Sprinkle , parmesan, mozzarella, sweet potatoes, onions, and a shake of garlic powder and crushed red pepper. 6. Bake pizza for 8-10 minutes until cheese is bubbly. 7. Plate pizza and add arugula. Drizzle with olive oil and lemon balsamic (or lemon juice) to finish! Season with salt and pepper, if desired.
