Semi-homemade Weekday Meal


Semi-homemade weekday!

Weekday's are tough- and after a long day the last thing you want to do is come home and cook a family meal. But this wholesome, clean, filling meal is on the table in 15 min and (added bonus) costs around $12 for the entire family!

Ingredients:

1lb whole grain pasta 1 small container cherry/grape tomatoes- halved 1-package precooked (clean) chicken meatballs- I use Aidels caramelized onion 2-3 garlic cloves, minced 2-3 cups (generous handfuls) fresh spinach or arugula 3 tsp EVOO Shredded Parmesan or fresh mozzarella for topping. Salt and pepper to taste Pasta water

Time to table: 15 min

Directions:

1. Boil water and add pasta. 2. While boiling add garlic to EVOO on med heat until fragrant, about 2-3 min. Then add meatballs, cook 2 min. 3. Add tomatoes, salt and pepper, and a 1/4 cup of the pasta water. 4. When tomatoes begin to soften, 3-4 min add greens on top. Let wilt and stir in. Add pasta water as needed. 5. With a slotted spoon, add pasta to pan, folding in carefully. 5. Serve topped with fresh mozzarella or shredded Parmesan cheese!

For you fixers: 1-red (3 meatballs), 1- yellow, 1-green, 1-blue
